Lime Cake with Lime Cream Cheese Frosting

Happy Easter everyone! I hope you all had a lovely and fun filled Easter with loved ones 🙂

I spent the majority of my break catching up with good friends that I haven’t seen for far too long, and reacquainting myself with Harry (again). Honestly, I don’t think I could ever get tired of Wizard talk, Dumbledore or Hogwarts.

Before I get too carried away with withcraft and wizardry, I’ll get a move on with the Lime Cake with  Lime Cream Cheese Frosting that I made over the break. I’ve no idea why but I’d been having the urge to bake something citrus-y, air go these lime cakes were born.

Lime Cake with Lime Cream Cheese Frosting

The recipe for this Lime Cake calls for some freshly squeezed lime juice and lime zest, which makes these cakes the perfect solution for anybody craving a slightly tangy dessert. The cake is more towards the dense side, however is still quite moist and is nicely balanced with the smooth cream cheese frosting.

Recipe taken from Alaskafromscratch
Makes a 9-inch cake

1 and 3/4 cup cake flour
1/2 tspn baking powder
1/2 tspn baking soda
1/2 tspn salt
112grams of butter, lightly softened
1 1/4 cup sugar
2 eggs
3 tblspn fresh lime juice
1 tblspn key lime zest
3drops green food coloring
3/4 cup buttermilk

–  Preheat oven to 180C. Grease and flour two 9-inch round cakepans.
–  Sift the cake flour, baking powder, baking soda, and salt. Set aside.
–  Beat the butter on low until it’s softened a bit. Add the sugar and increase the speed to medium.
–  Beat the butter and sugar until fluffy
–  Add one egg at a time, beating well after each addition.
–  Add the lime juice, zest, and food coloring and beat until mixed (don’t worry if the mixture looks curdled)
–  Add the flour in three additions, alternating with the buttermilk, beginning and ending with the flour, scraping down the bowl as necessary
–  Mix on low until just combined.
–  Divide batter evenly between two pans and spread flat with an offset spatula.
–  Bake 25 minutes. Cool completely and frost with cream cheese icing.

Lime Cream Cheese Frosting
Frosts 1 9-inch cake
112grams butter, lightly softened
225grams cream cheese, lightly softened
2 cups powdered sugar, sifted
1 tblspn lime zest
green food coloring (I used 1 drop of food coloring to get that light green colour)
–  Beat the cream cheese and butter together until smooth
–  Using a spatula, incorporate the sifted icing sugar (1 cup at a time) into the cream mixture
–  Once all sugar has been added, mix in the lime zest
– Add in the food coloring if desired
– Frost cooled cake
