Banana Cake Choc Chip CookiesI love to sing. I sing when I’m happy, I sing when I’m bored, I sing when I’m washing the dishes. I sing when I’m driving, I sing when I’m brushing my teeth, I’m even singing right now. I also get told I’m tone deaf, I get told to shut up, and I get told that I have the voice of an angel, then I get laughed at. But that’s ok, because 11 times out of 10, I’m also laughing at me. Which makes it hard to keep a straight face, when well, I have to live with myself.

But you know, they say laughing works the abdominal muscles. So, from what I’ve just told you about myself, you’d think I’d have an eight-pack right now, right? HAH! Um, no.

It’s all because of the evilness that resides in my pantry. Evilness that creates even more evilness like the banana cake choc chip cookies you see here.

Banana Cake Choc Chip Cookies

See that? That’s dark velvety smooth chocolate chips ready to attack all that hard work laughing at yourself has achieved. Evilness. But oh so delicious evilness.

These evilness are exactly like banana cakes, in cookie form. They are soft, moist and fluffy, and will most certainly fulfill any sweet cravings you may have. And they are also super easy to make. I won’t blame you if you decide to become evilness’ best friend 🙂

Banana Cake Choc Chip Cookies

Banana Cake Choc Chip Cookies
Recipe slightly adapated from RecipeGirl
Makes about 30 cookies

1 1/2 cup purpose flour
1 tspn salt
1/2 teaspoon baking soda
170 grams unsalted butter, at room temperature
1/2 cup granulated white sugar
1/2 cup light brown sugar, packed
1 large egg
1 1/2 teaspoons vanilla extract
3/4 cup ripe banana, mashed
1 cup rolled oats
1/2 cup to 3/4 cup of dark chocolate chips
1/2 cup walnuts, toasted & coarsely chopped

–  Preheat oven to 180C.  Line baking sheets with parchment paper
–  Whisk together flour, salt and baking soda in a medium bowl
–  In a large bowl, beat butter and sugars with an electric hand mixer
–  Mix on medium speed until pale and fluffy
–  Add egg and vanilla. Beat on low speed until combined
–  Mix in banana
–  Using a metal spoon, fold in flour mixture until just until combined
–  Fold in in oats, chocolate chips and walnuts
–  Drop cookie dough by tablespoonful onto baking sheets
–  Bake until golden brown for about 14 mins
–  Let cool for about 5 mins before transferring it onto wire racks
